240g tempeh, cut into 1-inch cubes

2 tbsp soy sauce

1 tbsp maple syrup

1 tbsp apple cider vinegar

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp ground cumin

1/4 tsp black pepper

Vegetable stock (for boiling tempeh)

Skewers (soak wooden skewers for 30 mins if using)

INSTRUCTIONS

Boil tempeh cubes in vegetable stock for 5 minutes.

In a mixing bowl, whisk together soy sauce, maple syrup, apple cider vinegar, olive oil, smoked paprika, garlic powder, cumin, and black pepper for the marinade. Coat boiled tempeh cubes in marinade and let sit for at least 30 mins or overnight in the fridge.

Thread marinated tempeh onto skewers.

Preheat grill to medium-high. Grill skewers for 2-3 mins per side, brushing with leftover marinade. (Or bake in a preheated oven at 375 for 20 to 25 minutes minutes if you prefer.)
